Encouraging Story and Wonderful Recipes!
When I came across Carrie Vitt's website, Deliciously Organic, the first week we were on our grain-free diet it was a life saver. So I was thrilled to get my hands on her new cookbook.First and foremost, my favorite part is the beginning of the book. In the cookbook she goes into specifics about what led to her thyroid disease, her symptoms that left her house bound for months on end with no hope in site, her final diagnosis and her path to healing. As we work our way towards a total healing for our son, it has been such an encouragement to read her story and know we are on the right path to accomplish that.Living grain-free is a big jump for most of us and when we first started this journey at the end of September I was overwhelmed and not sure what was left to cook with or how to convert a traditional recipe into a grain-free dish. I am so glad I have this cookbook now, all in one place I can find all the grains to avoid and sneaky places they add it. At a glance I can see the types of flours that are healthy to cook with and why fats aren't all bad. I learned that lard is actually a good thing. Yes you read that right, lard has gotten a lot of unjustified bad press all these years. Lookout, it's staging a comeback folks.Other things you'll find are helpful tips on kitchen equipment, how to get your kiddos to embrace grain-free, and a super helpful conversion chart for converting your old favorite recipes.As I flipped through the book, I couldn't believe how delicious everything looks. I cannot wait to try each of these recipes. I'm especially excited that the holidays are coming up giving me plenty of chances to try out all the desserts.I have two small children and they both asked for seconds when I made the Creamy Chicken and Mushroom Pot Pies and the Cauliflower Fried Rice. Instant hits!I would highly recommend this cookbook if you live a grain-free lifestyle or even if you don't. Your stomach will thank you!

Very "Carrie" and worth the money!
Below are my list of pros and cons about the book. For the record, I think there are so many 5-star reviews not because they're fake (which was stated in another review and of course is a valid concern), but simply because Carrie's blog followers like myself were the ones who pre-ordered the book. Therefore, we were the first to review. We have followed Carrie and her blog, so we knew what to expect when paying the money we did.PROS - Clear, concise, perfect for anyone new to this type of diet (because she includes recommended brands, pantry staples, etc), detailed recipes that don't taste like some subpar paleo recipes we've all grown to resent (that end up wasting expensive ingredients!); Carrie's story (detailed in the book) is inspiring and may resonate with some who are seeking a non-traditional approach to healing; there are 125 REAL recipes (aka she doesn't create a garden salad and call it a "recipe" because how annoying is that?).CONS - Recipes are not entirely paleo (but have paleo substitutions); the information in the beginning of the book may not be helpful for someone already brushed up on grain free living and detox because it is mostly basic info; the ingredients list for some recipes can be long; some ingredients are expensive (though I wouldn't knock off a star for it because that is to be expected); a handful of recipes seem really time consuming - like not worth the time even for a special occasion.Overall, I really like this book and am happy to have bought it. I recommend anyone on the fence about buying it to go to her blog at DeliciouslyOrganic.net and see if it's your "thing."Hope this helps!

An awesome book for those who are new to eating gluten free
I have a thyroid issue and have heard that eating gluten-free can help with symptoms. I came across the author's blog and decided to give her book a try. It is very well written and has some wonderful recipes. They are easy to follow and so far come out exactly as described. IF you are looking into cutting gluten from your life this is a great resource to get started. While I never completely converted to a gluten-free diet, I still use some of these recipes.

Delicious and satisfying
Carrie has compiled yet another winning cookbook.As a fan of her work (I follow her blog), I preordered the book and have already made 6 recipes. I believe if a cookbook has at least five delicious recipes that I would want to make again, it is a worthy purchase. I look forward to making many more recipes from this treasure of a book.The bacon meat loaf and creamed cauliflower were a hit tonight with my picky eater- she asked I make it again later this week for her birthday. A rave review from a girl who has resisted the family transition to gluten/grain free.Yesterday, we started our day with the fluffy pancakes- and promptly over ate. Flavorful and incredibly satisfying we could not get enough. We did not miss anything a conventional pancake offers. And that is what makes Carrie's recipes priceless.The Zingers later in the afternoon, that we shared with neighbors, were ridiculously tasty! The small bundles of savory/sweet bliss were gone quickly- but the memory of these unique appetizers lingers.Health concerns made dietary changes mandatory for our family. We were concerned about giving up the flavor and satisfaction of our favorite foods. Carrie's recipes have made the transition easier. We miss nothing. If You Have Hashimoto's, This Cookbook Can Assist in Healing
When I was diagnosed with Hashimoto's disease, my husband and I scrambled around for solutions. Long story short, I learned about this book and acted on it immediately. This book gives food options for people with Hashimoto's and it's packed with delicious, healthy options. The author, Carrie, has an inspiring story in healing. I am very grateful I found this book.My husband enjoys cooking and has made many delicious meals for us -- following this cookbook. I'm eating in a more healthy manner now. Eating the right foods is a key in recovering from Hashimoto's. You will still need the guidance of a doctor, natural doctor (if you choose), and nutritionist, but this cookbook can assist you on the healing journey. It is helping me on my journey.

Lovely Practical book for those following a Grain Free diet and needing inspiration, including some much missed modern treats!
So pleased I purchased this book! Firstly it is Hardback! Very well laid out with Easy to follow recipes with pictures of the finished dish. It is written for the American market with measures being in cups! It is a godsend for those of us who have had to give up all grains and sugars, as there are alternative recipes for muffins and pancakes, so you don't miss out on that occasional treat! Where applicable, Carrie also give instructions of how to adapt the recipes for those following a Paleo or Dairy Free Diet.I particularly like the Cauliflower Rice recipes and the Creamy Chicken and Mushroom Pot Pie which is topped with a biscuit rather than pastry and Sautéed Kale with Raisins and Walnuts. Looking forward to trying the Carrot Cake Cupcakes with Cream Cheese Frosting when friends visit this weekend!There are also practical recipes for home made Sauerkraut, Sweetened Condensed Milk, Ketchup, Grain Free Bread, Stocks, Ghee, Baking Powder, Soaked and Dehydrated Nuts and Seeds just to name a few.
