Is this honey supposed to come solid? I just opened my brand new jar and the honey inside was solid

Heather honey is actually known for its gel-like solidity! It has a higher protein content than almost all other honeys. Much like pectin and gelatin based gels, it loosens into more of a liquid when heated.
