Absolutely Fantastic Product!
Not sure why anyone would argue this Speck to be subpar, it is a great tasting Speck as you would expect to find in any decent Italian market. It’s a product that has all the characteristics of a Nostrale-type Affettato, meaning don’t expect the pre sliced Costco-type dry salty Speck, Nostrali have a different flavor profile because they have less processing so they are not filtered and tend to have a richer texture because they use traditional methods of curing and selection. This speck is produced from a company with a Protected Geographical Indication which guarantees the product to be produced within the same geographical area, in Italy this translates to a small region making this Speck a particular product from a region with a long Speck-Making Tradition so buy with confidence, I don’t think they are capable of making “bad speck” in SudTirol. This product is perfectly balanced, I did not find it chewy, it is very tender but I think you have to have a deli counter style ham slicer to have thinner slices to appreciate it, I have one of those and boy does it make a difference. Only Prosciutto likes to be treated in such way, and this Speck slices like a nice higher grade prosciutto. So yes, I would say the quality is pretty great as well. I wasn’t paid for leaving this review, I am just enthusiastic to have access to this type product.

Wonderful Speck
Awesome product. Slice as thin as possible. This Speck is as good as it gets!

Not Aged
First time i purchased this product was great. Last time was not, this product was not aged at all t was very soft. Quite a disappointment!!
