For fermented sausage, it is very important that you have a large grind of very well defined particles. Pre-ground meat is usually too small a grind and has very little particle definition. It is always recommended to grind your own meat very cold with a very large gauge grinding plate.Check out the UMAi Dry YouTube channel for videos demonstrating this.

Q: Does this come with the fermentation stuff?

No. You need a Dry Sausage Kit to get the starter culture.
