My entire life has been influenced by Asian cuisine, so I am familiar with the flavors and textures across this broad region of our planet. A recent desire to improve my diet by making better food choices has led me to experiment with these noodles that are made from non-traditional materials. Similar in size to somen, kook soo noodles, rice vermicelli, or even angel hair pasta, but with a different feel in consistency and texture. Almost as if you can tell it is higher in fiber and gluten free. This I can get over, as I realize nothing is free. The taste however would be a deal breaker -- and this turned out to be surprisingly mild. Yes, you can tell it's made from edamame, so if you cannot deal with that then don't buy or try it. After all, comparatively it's not inexpensive. I made the entire package and it would come to 4-5 portions. Instructions say boil for 3 minutes but I cut that to 2. Here's why...The dish I made has been in my quick-n-easy dinner rotation for years. So far everyone has raved when I used spaghetti / thin spaghetti, for the al dente texture. So I was open minded but hesitant for that reason alone. Even with the usual pastas, I cook it a minute or 2 short of recommended time because after draining, I add it to the saute pan of fresh vegetables, protein and sauce where it continues to cook and absorb the sauce and fusion of flavors.While spendy, I would buy it again, and use it as an occasional crave killer for recovering pasta-holic.

Change cooking to less time for hot plate
Protein is good. Texture is soggy if not under stove top directions for time. Might need less 2 min. To keep the texture aldante.

Taste gross
Texture was off putting. Almost rubber like. After eating one plate I had to force myself to eat the rest just not to waste. Has weird after taste that you can find out for yourself. It’s just not the same as regular pasta, and any brand pasta would taste better than this product.

So pleasantly surprised!
I have tried so many different pasta substitutes and I have been very disappointed with most. I have to say this one was definitely a pleasant surprise. While does taste slightly different than pasta, it absolutely scratched that itch for me, and was super filling. I just had it with marinara sauce And I love how much protein in it has. A+ rating from me. Made it tonight for the first time and this will now be my go to pasta substitute!

Love the health benefits, interesting texture/flavor
Used the product as replacement for traditional spaghetti. 2 plates with white sauce and 1 plate traditional red sauce with meatballs. Sauce always makes the meal and this was on par. Friend and husband both agreed these noodles were an acceptable pasta replacement, but found the texture and flavor a bit too different to purchase again. I liked the quick cooking time and the noodles held their shape and didn’t stick together. If I had been raised on these noodles, they would be as popular as traditional.
