can you remove the back legs?

Yes everything is removable and it can be a little too easy removing some parts. I've reposition mine a few time trying to get it into a different pose only to have something pop or drop off in the process.

Are these supposed to be painted, or just assembled?

Thank you for the question. The parts on this model kit do come in a light blue color scheme so that painting is not required. However, many Gunpla model builders prefer to customize the look of their built models, so it may also be painted if you choose to do so.
