The best risotto rice bar none, aged like the best Basmati, get the oldest you can afford. Keep it simple, make it about the rice.

Buon riso, ma secondo me soppravalutato. Nei risotti attenti alla cottura, tende a scuocere velocissimamente, non seguire i tempi indicati, ma provare sempre dopo i 14/15 minuti di cottura. Il meglio si ottiene con risotti di pesce. Un po’ caro per quello che offre.
