Mannavida Gluten Free Buckwheat Flour 2500g (Pack of 5). Buckwheat Flour is one of the best sources of protein in the plant kingdom. It is freshly milled in the UK. Buckwheat is not a cereal and therefore is not related to wheat (despite its name). It comes from the same family as rhubarb, sorrel and dock. It's a great gluten free alternative to wheat flour and is particularly good in pancakes, scones and noodles. It has a unique slightly nutty flavour that's especially good in yeast bread and flat breads. This product has been milled and packaged in a nut, dairy, gluten and sesame free environment. All flours grown from NON GMO crops. Recipe: Buckwheat Blinis • 85g MannaVida buckwheat flour • 1 tsp baking powder • salt and freshly ground black pepper • 150ml milk • 1 tsp mustard powder • 70g grated cheddar • 1tbsp chopped fresh chives • 2 egg whites • pinch salt • 10g unsalted butter 1. Mix together the flour, baking powder, pinch of salt and pepper and mustard powder with the milk to form a smooth batter. 2. Add the cheddar and chives and stir until evenly mixed. 3. Whisk the egg whites in a separate bowl until you have soft peaks. 4. Gradually fold the whites into the batter mixture using a metal spoon. 5. Melt the butter in a pan over a medium heat. Spoon large spoons of the batter into the pan to make pancakes about 10cm diameter. 6. Fry for about 2-3 minutes until the top is bubbling and the underside looks cooked. Turn the blinis over and cook the underside for a further minute until its golden brown. 7. Keep warm until you've cooked the whole batch. 8. Serve with smoked salmon, scrambled eggs and a scattering of chopped chives and a wedge of lemon.
