Fructose in its natural form is simply fruit sugar - and they use certified organic fructose that they derive from the beets. It is NOT a 'high fructose corn syrup" that is first derived from corn and then concentrated to achieve a much higher 'sweetness factor' as in conventional sodas and packaged goods. They use fructose instead of simple table sugar because they wanted to limit the amount of overall carbohydrates in the resulting product, and they wanted to reduce the glycemic index of the chips as much as possible.
