If I using dual monitor mount will it flip over?

No, it should be sturdy enough to hold the monitors. I originally was going to use the mounts, but found that the desk top is plenty big enough to hold both my 25” monitors.

When adjusted down for sitting, how high off the desk is the keyboard?

Is this noisy moving up and down? Does it wobble when typing?

It is very quiet when moving up and down. There is a slight wobble when typing, but it’s not problematic at all. If your monitors are wobbly on their bases then it would be more noticeable.

Is it hard to write on? Does it get pretty wobbly? I'm an avid note-taker...

There is little if any wobble when you're standing. I put two small foam pieces under the far left and right ends when it is down because the keyboard is just slightly above the desk level and it shakes a tiny bit. I would highly recommend this as a stand-up option. It's half the price of what I have in my office at work. I too take a TON of written notes and find I need to move the keyboard for space but I guess it will depend on how you have your monitors and keyboard set up. Hope that helps!
