As described, arrived on time.I used it in gluten free pizza dough, it did add something. I will use in my next batch.

Replacing about 15% of the flour in a pizza recipe for gluten free pizza results in a well risen dough. I've been making pizza for 59 years every Friday night. Suddenly my son, age 50, could no longer digest wheat flour and gluten free flour, missing gluten, is hard to get to rise, but adding the modified tapioca works much better.

Great additive for homemade Gluten free bread

I used the Expandex to make gluten free wonton wrappers, and it worked very well. I was able to roll out the wrappers nice and thin, and the wrappers filled cooked up nicely. I was surprised how well they held together in the soup - even after a few hours.Then, I added Expandex to my family's favorite chocolate cake recipe - turning it into a fluffy, moist cake that few would know was gluten free. the texture was soft and pliable, not crumbly or heavy like most gluten free baked items. Can't wait to experiment with a few more gluten free recipes!

This makes all my GF breads so much softer & fluffier. I highly recommend you look into adding this to your GF baked good for improved texture!!
