Love my Calphalon Tri-ply Stainless!
PROS:+ Beautiful design+ Excellent heat conduction+ Stay cool handles+ Stains and discoloration easily cleaned with Bar-Keeper's Friend cleanser+ Dishwasher safe+ Have not had problems with food sticking+ Excellent priceCONS:- None that I can think of!I've been using my Calphalon Tri-Ply stainless for several years now and absolutely love it! It seems to perform as well as my sister's All Clad stainless but cost significantly less. Heat conduction is excellent (try simply running hot tap water into a pan or pot with your hand on the bottom- in no time at all it's too hot to hold without a potholder - that's good conduction). I rarely have a problem with food sticking to the pan. I did get a fantastic tip that to prevent food from sticking, heat the pan first and then add your oil (or margarine/butter)- it does seem to work! I definitely recommend the Calphalon Tri-Ply Stainless, particularly if you're attracted to All Clad but can't stand the thought of shelling out that kind of money for cookware.

A great pan
I have used a set of Calphalon non-stick pans for maybe 8 years. For a while they were good, but then started to loose their non-stick finish. I believe I followed the instructions for use and care properly. I can't help but wonder if the family and I have been eating bits and pieces over the years - yuck! Anyway they finally got to where they aren't non-stick any more and are very difficult to clean.I started replacing them by purchasing the Tri-ply Stainless 8 inch pan. Wow!!! Seems almost more non-stick than the non-stick pans, very even heating, easy to clean. I think if there was one negative, it would be keeping it as shiny and new looking as when it was purchased, but so far that has not been a problem either. I absolutely plan to begin replacing my whole collection with this series.By the way, I also looked as some other options such as All Clad - these are cheaper and my guess would be that these are at least as good, and the Kirkland from Costco - much cheaper, possibly not quite as quality made, but mostly there is a limited selection of items.All in all, a great pan ( the whole line is good ), and I definitely recommend them to others where I may not have recommended the older non-stick.

Made my first two egg omelet in this pan, and the sloped pan edge made flipping the omelet a breeze

Absolutely terrible!
We were super excited to try calphalon's top of the line and man were we disappointed! No matter how you heat, preheat, condition this pan everything sticks! ! Hard to clean! The non stick series is far better! Would not recommend!

Nice pan but not as stick free as Teflon
Eggs might me my favorite food. I often cook omelets or ham and egg sandwiches. I like to keep the fat down when I cook so I usually use cooking spray to grease the pan. I generally use a Teflon pan and replace it when the surface starts to mar. Reading reviews for this pan, I thought maybe I could do away with the Teflon pans that wear out. Well this is a nice pan, it is well made, looks like it will last for many years, and I like that I can put the pan in the oven to say melt the cheese on an omelet. Unfortunately it is just not as stick free as Teflon. If I use a little extra cooking spray, the pan does OK for an omelet. Usually I can get the omelet out without much sticking. However; it just doesn't do a good job on ham and eggs. The meat totally sticks to the pan and tends to blacken it a bit though it is easy to clean off after I'm done cooking. The eggs stick a bit less especially if I don't cook ham first but they to tend to stick some and are difficult to turn over without breaking yolks. Since I usually want to cook the ham with my eggs, this pan just doesn't work well. I tried pre-heating the pan, not pre-heating etc. and the results are the same. I like the pan and would buy others in the set for different purposes but to make my ham and egg sandwiches, I needed to go back to Teflon. I do use it for omelets as I like the size. I like to do my omelets frittata style and finish them off under the broiler. The metal handle outweighs the stick factor with the omelets.

A quality small pan
Just the right size for a small omelet or a single grilled-cheese sandwich. And it has the quality you would expect from Calphalon. I love this pan.

Very Nice Fry Pan
This is a great pan, as a stainless. It does not do omelets well, but then I would not expect that from a stainless pan. It is obviously well built out of premium stainless. It's very sturdy in every way, including the handle. I like that it is all stainless, including the handle, because it allows me to put it in the oven. I'm careful putting it in the oven, of course, and I keep the temp below 400, although I think it can go a little higher. I'm also careful to not overheat it on the stove. I know it can be washed in the dishwasher, but I always wash it by hand, to avoid discoloration or patina damage from chemicals. I bought it for life, which is why I think it is worth the care. I also bought the 10 inch version, which is just as good. I have other Calphalon cookware pieces, and they are all of excellent quality, including the non-stick surfaces on some of them.
