I am learning to bake cakes (cupcakes) at high altitude. So many of the high altitude recipes call for cake flour. Swans Down is a name I recognized from baking with my aunt when I was young. This product creates a light fluffy crumb that holds together with shaping and icing. The price is great too! I have been very happy with this brand. I also used it in small amounts in my Brioche Bread to create that light fluffy texture. Very happy with my purchase!

Not my favorite texture
I used this is various came recipes that requires cake flour, and I am not really sure how to feel about this product. The cakes turned out less fluffy and more rubbery. I am not sure if that is to be expected, but I wanted a soft and light texture, whereas this was more tough and bubbly. I think I’d rather bake with all purple flour.

My secret ingredient right here.....
I CANNOT share what i use this cake flour for when baking, but i will share that this cake flour is the best quality, stays fresh, and bakes real nice! I'm very pleased with the fair price, so I'm able to order a few boxes at a time! My baking season is during the cold months and I get a lot of us from just one box. I'll never use another cake flour for as long as Swans Down is around!
