‘Instant’ yeast that responds more like ‘active’ dry yeast
I’ve been baking bread for 30 years and my usual go-to is Fleischmann’s instant. With the pandemic and low supplies I had no choices but to buy this product that I’d never used before. ‘Instant’ yeast should not require activation in sugar water, it should start working when added immediately to the bread dough. After much trial and error and many loaves of bread I’ve discovered that this yeast responds well only when it has been activated by stirring it into a warm cup of water with sugar or honey added, a procedure which is normally needed only for ‘active’ dry yeast. This yeast does not respond like any ‘instant’ yeast I’ve used but more like a regular ‘active’ yeast, and even better when a higher sugar content is included.I bought 2 pounds of this product since I couldn’t get the brand I normally use, so I’ll use this until it’s gone but I probably won’t buy this again.
