How flexible would you rate this 5” boning knife. On a scale from 1 to 10. With 1 being very flexible/springy and 10 being ridgid?

I would say an 8 or 9 . Great knife I have 4 of thelm .

What is overall length of knife?

I measured a 6 inch Dexter it was 11 inches overall a 5 inch Dexter is 10 inches .

Is it stainless steel? does it rust?

stainless but will rust in saltwater

Do they come in different levels of flexibility or are they all the same? Victorinox does give you a choice.

Not that I know of . They are flexible I do fish with thelm often . Great for deboning beef and pork too.
