Q: I bought a pack by grabber about 2 years ago where you could put a partially used warmer and then get it out later….is this still an option?

Once you open the package you have to use it. You can go back 3 or 4 hours later and re-shake the item and you should be able to finish using it.

Q: Will they "go off" and get hot by themselves?

you do not need to shake them ..that will make them hotter faster but shorten the time they will last by a little. Seller Sports-Nuts
