Can these be reliably fitted with rx lenses at a later date? i like the white gold which i can't seem to find in the usual rx lineup.

Yes, I had mine fitted with Rx lenses at my optometrist. They won't be the same lenses that come with these standard (glass).

Yes, when I fly I can see screens and displays at all angles due to the non-polarized mineral lenses. The non-polarization also aids in spotting air traffic when you might only pick up a glint off a wing at distance. As a pilot, I will not even own one pair of polarized lenses due to safety considerations.

Are these sold as frame only to get prescription lenses made for them?

Honestly you could order them like this and the eye doctor will switch them out. That's what I did
