Q: Can you use this to make yogurt?

Yes. I used a vegan yogurt starter from Cultures for Health, and followed the directions on their package as far as time and temperature. Having said that, I did make a couple of alterations beyond that so that I could achieve the thickness I desired in the final product. I first refrigerated the coconut milk (3 cans) and used only the top thicker portion of each can (reserving the more liquid portion for a different recipe,) and then proceeded forth using the recommendations from the yogurt starter packet. I got good results.... and great tang and flavor. The consistency was still a bit thin, so I further refrigerated the finished yogurt for 24 hours. This improved matters greatly. To use the yogurt in a sauce (such as Tzatziki which you need to add both lemon juice and white vinegar to the yogurt - further reducing it’s thickness) I wanted the yogurt super thick (like Greek yogurt) so when I mixed the top portions of the refrigerated coconut milk cans with the powdered vegan yogurt starter, I also added a cup of soaked cashews (soaked in water for 2 hours, then strained from the water) and then blitzed it all in my NutriBullet (blender) for 30 seconds before proceeding with following the instructions for yogurt making. This I also refrigerated overnight and achieved total success. Now that I know what I need to do, it isn’t as much of a process. I am finally getting the right consistency, flavor, and tang that I had been missing in yogurt since I went completely plant based several years ago. I have yet to find a store bought plant based yogurt that matches making my own with this brand of coconut milk. Mine is just better. Good luck, and happy yogurt making.

Q: Can you whip this for toppings ?

If this brand is like any other real canned coconut (e.g., Native Forest Simple), you need to refrigerate the can(s) for a couple days so that the full fat of the coconut forms into a solid thick layer. THIS is what you use to whip into a coconut cream. Then you can add vanilla to that if preferred (Medicine Flowers Vanilla is the best. And you don't need much).

Q: Some reviews say dented Damaged cans and some say it was rotten. Is this returnable if there are issues ?

I just received a shipment of 12 cans. Six of the 12 cans were dented. The packaging was not damaged so they obviously put the damaged cans in my shipment. I find this very irresponsible and not good for business. However, I called customer service through Amazon and had no problem getting them replaced. From what I can tell, the milk is good.

Q: Is this made from coconut extract ?

The can does state that it presses the flesh of the organic coconuts to yield an oil-rich extract— but it is very tasty and we use it frequently for cooking!
