Q: With alcotec 48 ,if i am using grape juice to make wine how much quantity of sugar needs to be added to get 20% alcohol for a 20 liter batch

Thanks for asking. This turbo yeast will require about 14lb of sugar in a 20L batch to achieve 20% alcohol. Therefore, you will need to add 14lb of sugar minus the amount of sugar already present in your juice. This will vary depending on the sugar content of your juice. Therefore, the actual amount of sugar you need to add could be around 7 to 10lb. The proper way to determine this is to use a hydrometer to test you juice/sugar mixture and keep adding sugar until your hydrometer measures a gravity of 1.150. Just keep in mind that you can’t use grape juice from the grocery store shelf that is preserved with chemicals such as potassium sorbate because they will inhibit the yeast. Also, be aware that a wine made with just grape juice, this yeast and lots of sugar will taste unbalanced, rather bland in fruit flavor and will be somewhat harsh since the final product is intended to be distilled afterwards. Q: How much wash does this make?

6.6 gallons (25L) per package. Do not stack more than two packages (13.2 gallons) when using enough sugar for 20% alcohol as it will overheat. Will work for larger batches but use only 2lbs sugar per gallon and then expect only 14% alcohol. But in doing so you can then use only one package for every 10 gallons. This is additional information as directions on package are only for 6.6 gallons.

Q: Is this used in corn mash

Certainly can, just remember that yeast only ferments sugar. So you must convert the starches in the corn to fermentable sugar with Amylase enzymes if you want the alcohol to come from the corn rather just from any added sugar. This applies to any yeast.
