A great skillet that is a dream to clean
I have several friends (OK, 6) who urged me to try the Copper Chef cooking utensils when my aging (other brand) had stated feeding us telfon scraps and little bits of aluminum alloy along with the food I was fixing. So a little over a year ago I bought one pan (not this one) at a local discount store and was very impressed. So when I needed to replace my 12" skillet, I bought this one and have been entirely satisfied with it (as well as the other Copper Chef pans I have bought since then).I had read the reviews which claimed that these pans would lose their "non-stick-ability" very quickly and/or that they would heat very unevenly. But so far I have to lump those stories in along with other urban legends that turn out to be less than accurate.First, I use this skillet on average (I kept records for the first 4 months) between 5 and 9 times a week, and so far I have had absolutely NO problem with sticking. After a few months I even *tried* to make something stick by melting cheese in the skillet and letting it "burn." I let the pan cool and then I washed out with hot water and soap: the sponge was actually unnecessary as everything turned loose as soon as I used the squirter hose on it in the sink.By the way much to my surprise, unlike my former aluminum pans, when something cooks over the top and runs down to the pan's bottom and gets burned there, that comes clean as well and ALL of my Copper Chef pans still look about like they did the day I took them out of their box. In short, I have seen NO problems with sticking and the pans clean up beautifully both inside and out. I DO NOT put them into the dishwasher EVER, nor did I "pre-treat" them as some have suggested. (I did have an initial problem making omlets: the pans are so slick inside that the first time I went to "flip" the omlet over, I ended up putting half of it onto the cooktop. Oops - so take it easy at first: flipping omlets or flapjacks is much less of an Olympic event with these than with my teflon and other "non-stick" pans.I read the reviews which complained about their "unevenness" of heating. Yes they aren't perfect. But I use a gas cook top, and I have had no problems whatsoever caused by hot- and cold-spots in these pans. Yes, I do have to turn the pan a bit sometimes when it is a bit on the "over-full" side in order to make sure that there are no hot-spots. But I had the same problem with another set of cookware (about 30 years ago) which was copper-clad with stainless steel. So I don't really see it as an issue. A cook considers his/her pots and pans as "tools" and knowing how to use one's tools is really a necessity in any endeavor if the user wants really good results.Are there problems? I'm sure there are although I can't think of any off-hand, but here are my list of "complaints"- At first I was expecting to have to use a pot holder to keep from burning my hand on the metal handles of the skillets. But I didn't buy the silicone "handle covers" sold to protect the user from a hot handle, and much to my surprise this has turned out to be a non-issue.- I wish the pan were deeper (gee, isn't it odd: it's the same depth that is shown on the web page.... duh), but there's a deeper version available and I will buying it at some point. (another non-issue).- The 12" skillet is too big to put in the pots-and-pans drawer where I had planned to put it. But then replaceing a round 11" pan with a 12" square version should have caused me to realize that it wouldn't fit there. (again a non-issue)- It wasn't free. (but it was reasonably priced, and if I had gone to the Copper Chef website I could have found this 12" square skillet for less when they had them on an "overstock" sale).OK, I don't really have any issues. Like all glass lids they can be a little "spotty" after washing them in the sink, but wiping them down before storing them takes care of the problem.WARNING: YOUR MILEAGE WILL VARY. I generally get all the "lemons" in almost everything I buy. This has been a pleasant surprise and I am extremely satisfied. These pans cook well, clean VERY easily, and don't seem to have any "gotcha's."The manufacturer doesn't seem to recommend using these on a gas cooktop turned to "HIGH" but I've done that a few times (when I was careless) and have had no problems so far - and I have learned not to do that.I would recommend theses pans (actually ANY of the Copper Chef pans I've bought) to anyone who cooks AND READS THE PRODUCT LITERATURE SO AS NOT TO (for instance) PUT THEM IN THE DISH WASHER OR DO OTHER THINGS THE MANUFACTURER RECOMMENDS THAT THE USER NOT DO.

Does not come clean when cooking with olive oil!
Great to cook on, terrible to clean. This is after soaking for 2 days; I cooked sausage with olive oil. Had a similar issue with avocado oil. Do NOT pour oil into the pan! Grease lightly with a paper towel maybe? This one is going in the trash. Very disappointed and won’t buy again.

So easy to use
I must admit this is my second piece of Copper choice. The first was a 12" large casserole. I was using it nearly every day, in the oven or stove top. I asked my husband to get it for me out of the cupboard and the lid slipped onto the floor and shattered. The problem was I couldn't find a replacement in that size so I bought the 12" skillet. The lid fits both and I like the skillet as well as the casserole. I've never had a cooking pot so easy to clean. I just put a little squirt of Dawn liquid and hot water into the pan, swirl around with a dish cloth and rinse. Now if I could just find another lid...……….

Housewarming gift, maybe. Long lasting,no.
Wasn't expecting to buy a lifetime non stick pan, but a couple years with proper use.... first 6 months the pan was great. And it has gradually gotten worse. The coating is rubbing off, cooking off now and the idea of non-stick is just that, an idea. I use this for steaks, eggs, and bacon. That's it really. Only used a plastic spatula, trying to keep from scratching the coating. If this is your first pan, or first time trying non stick cookware, eh buy it. If your looking for a quality with pro longed durability, I would recommend spending a bit more and buying something else

THIS PAN IS AMAZING
This is the best non-stick pan I have ever owned. At first I thought the size I bought (12") was huge when it arrived - wondered how frequently I could utilize it. Well, I have been pleasantly surprised. I have a gas stove with a long middle burner. Yesterday I actually cooked a 2-egg mini-scramble/omelet for my husband on one side and a 1-egg scramble/omelet for me on the other. It has been perfect for so much -- I look forward to using it. And, it is truly stick free and washes out so easily. I will definitely add another Copper Chef Diamond Ceramic pan to my cabinet soon!!

Beautiful pan
I absolutely LOVE this fry pan!! It is by far the easiest pan to clean I have ever had. I bought one for myself a few months ago and loved it, and just bought a second one for a dear friend's birthday present - she deserves it :) I have read warnings though not to break the lid as you may not be able to replace it, and other reviews did warn that it cooks hot in the "middle" so you have to learn what temperature to control to avoid burning, but overall, I would recommend this pan completely !!!

Terrific Pan!
I was looking for a 12" square pan to replace a non-stick pan that had warped. I have a cast iron skillet, but it is so heavy for me now I shy away from using it. THIS pan is fantastic! Lightweight, even heat distribution and heats up quickly. I appreciate the extra handle, especially for oven use, and I expect if I follow the easy care instructions, this will definitely be my "go-to" pan for years to come.

We ordered this because we loved a smaller one
This review is actually on a ten-inch we bought first - the twelve-inch arrived during a busy week and we haven’t used it yet. However, it appears to be the same quality that convinced us we needed another one. Heat conduction is excellent, there is no sticking when the instructions are followed, and cleanup is as easy since nothing sticks. Yes - we are happy to own them.
