Will they work without jamming in a 9mm s&w mp shield?

That is the purpose of these snap caps. To check for functionality. If they jam then that usually means there's a problem that needs to be addressed but no they don't jam due to poor craftsmanship.

Will these work in a glock 45?

Yes, these snap caps work great in a Glock 45.

will these dummy rounds work in my P365? will they eject when I rack the slide?

I can't speak to the P365, but they have worked without a hitch in a S&W Shield 9mm and the IWI Masada. Just like at the range, they go everywhere when they eject.
