Does this pan scratch when you cut brownies or whatever in the pan?

You would have to cut awfully hard and with a very sharp knife to have this pan scratch. Stainless steel is the only bake wear or pots and pan I use.

Does anyone know what grade of stainless steel this pan is, example 18/0 or 18.8??

I spoke to someone at Norpro and the bakeware items I asked about were either 18/4 or 18/0, both less corrosion-resistant than 18/10 or 18/8. What Is the maximum temperature this can withstand?

It's very substantial and quality stainless. It will do fine in any kitchen oven temperature. Stainless melts at 1400 to 1450 Centigrade, which is 2552 F to 2642 F!
