Hi, please you tell me if this is classified as normal starch or resistant starch? Any idea what the Glycaemic Index is for this product?

Unmodified starch is mostly retrograde / resistant starch. I take it for this purpose. Not sure of GI.

Hi, is this potato starch guaranteed gluten free ie can it be assured that it was packed in an environment that does not pack items containing gluten?

As far as l am aware if the packet states it is gluten free then the product will not be contaminated. I have had no problems with this brand.
