Almost Too Good to be Healthy
Skinnytaste One and Done is a beautiful cookbook. It includes a brief introduction to one-pot cooking and then recipes for the skillet, sheet pan, pressure cooker, air fryer, dutch oven, slow cooker and grill. Each of the recipes is laid out on one-page for easy cooking and includes a full-color picture and nutritional information, which I found very helpful. Gina also includes useful instructions for converting recipes from one appliance to another, in case, for example, you didn’t have an air fryer or just wanted to use the oven instead.Spicy Shrimp Tempura Bowls – Wow! These were amazing and quick to prepare! I’m drooling over the Spicy Mayo and Asian Vinaigrette Combo as I write this. My husband has a seafood allergy so we subbed the shrimp for chicken and these came out great!Pot Roast with Potatoes and Vegetables – Another Wow Recipe! I wouldn’t quite call it a one-dish recipe because it is far tastier if you sear the beef and sauté the onions before throwing everything in the slow cooker. We left the potatoes out and served with mashed potatoes on the side and this was incredible for a minimal amount of effort.Vegetarian Butternut Chili – This was very good and so simple to make! Dump a few things in the slow cooker, turn on low, and come home to dinner. Mine was a bit watery, so I might leave the vegetable broth out next time, but this is a tasty vegetarian dish if you are trying to cut down on meat.Creamy Butternut Pasta with Spicy Sausage and Sage – I’d argue that this one is far easier to make if you don’t mind dirtying a few dishes. Roast the butternut squash at the same time you cook the pasta and the sausage, rather than using one-pot and cooking them one after the other, otherwise, the pasta will be cold be the time the sauce is ready. That said, this was very good. Almost too good to believe it’s really healthy!Overall, this is a great cookbook for easy and healthy dinner ideas that come together quickly and will appeal to a wide audience.

Simple and accessible
I love to cook, but I also work a lot. If a cookbook comes off as too pretentious or complicated, it will not last long in my house. I just want to make delicious home-made food without having to go to 3 different markets to source some obscure expensive ingredient for an everyday meal. I have this and another skinny taste cookbook, and I can say I've cooked more recipes from these books than any other cookbook I own. It hits all the notes of being simple and delicious.I was concerned from the title that this would be a diet cookbook. There's nothing diet about the flavor where you need to give a measure of forgiveness to the taste because it's lacking. This is home-made comfort food.I especially love the instant pot recipes. Everything comes together so fast and can stay warm for hours. This simplifies the amount of cleanup and time involved to prepare a satisfying meal.

Best Skinnytaste Cookbook So Far
I have been cooking Skinnytaste recipes for my family for the last 7 years. I started cooking from the Skinnytaste.com website, and I have preordered the cookbooks because I love Gina's recipes and philosophy so much. Healthy, balanced eating with whole ingredients is how I've chosen to feed my family, and with Gina's help, the food we eat is absolutely delicious.With that all said, I believe the One & Done cookbook is Gina's best work so far. I love that the entire book consists of dinner recipes. I love how the book is broken down by cooking vessels (sheet pan, dutch oven, skillet, etc). I love that the recipes are consistently delicious and most are simple for someone who has some experience in the kitchen. I also love that my children are being introduced to such a wide variety of foods and flavors. They are learning to love different vegetables, as this book incorporates so many vegetables in a variety of cooking methods and flavor profiles, so although they may not like a vegetable prepared one way, we discover they like it in another recipe. And most of all I love the concept this book is based off of - I only dirty one pan, and it's the pan my food is served out of, making clean up much easier on busy weeknights.If you're looking for a cookbook to begin your journey into healthy eating, Skinnytaste is the way to go and One & Done is a great place to start. No foods are banned, everything is done in moderation, and Gina never skimps on flavor just to save calories and fat. This will be the best money you've spent towards improving your and your family's health!
