Why is this stating formerly maple syrup grade b, anyone? tia.

Hello, the naming and classification system has changed. Before it was named Grade B and now for the same syrup it is classified as a Canada Grade A Dark Robust Taste. We have to add that detail so customers that prefer a darker syrup know that our Late Harvest is the formerly named "grade B".

How do you store it after opening? Does it need to be in the fridge?

Always store maple syrup in the fridge otherwise mound grows on it
