I think this flour is the best low carb blend flour ever!
I love baking bread and wanted to make my own low carb bread. Bob’s red mill low carb flour is the best mixture of low carb and high fiber blend ever. I baked low carb bread with my own recipe with my bread machine today. The result was awesome! I made a fluffy tasty super low carb bread:)

Disappointed
I love Bob's Red Mill and have visited their store montly since I lived close to their location. Not too long ago, since starting the Keto diet, I ordered two of their low-carb bread mix. The first loaf of bread never raised. It was pretty horrible and my heart was broken. I wanted a slice of toast. So today, we decided to attempt to make dinner rolls because there will be three of us on the Keto diet and we can't have the rolls we purchased for the skinny guys. As I'm writing this, the rolls have not risen three hours after mixing it up. After the first attempt, we decided the package of yeast was probably old. I guess the second package was old too. Bob's Red Mill's prices are NOT cheap. I feel robbed and so, so, so disappointed over rolls that never raised. I even spoke to a lovely lady who told me exactly what to do.

Love this bread mix!
I love the bread mix - being lactose intolerant I use nut milk or almond milk to replace the dairy in the recipe - just leave out the water and use all almond (or similar) milk for all the liquids the recipe calls for in order to compensate for the thicker consistency of cream, and it'll be a nice loaf of bread. I also recommend to have the blooming of the yeast extended about twice the time to get a more even bake if you use a bread maker.

Success in my bread machine! Low carb bread!
I read a lot of reviews but decided I'd make up my own mind on this product. I've had a bread machine I've barely used - don't ask me why - so I got it out. I followed the instructions - even turned it on - and then realized I didn't have the paddle in the machine which explained why there was no mixing going on inside. SO I shut it down and added the paddle. I put my machine on the low carb setting and waited. I'm glad I checked it because it was done about 40 minutes sooner than the recipe says. Any way, it turned out perfect in color and texture. NOW about the bread mix. It is just as promised. My only complaint has more to do with me. I wanted white bread - you know the squishy white stuff we had peanut butter and jelly sandwiches on when we were small? (We baby boomers, that is) Any way, this is more of a whole wheat, nutty kind of bread. It is good - my husband loved it - but my head/mouth was hoping for white bread so it took some adjustment for me. The bottom crust was the strongest nutty taste so I cut that off. I used it toasted for a bun on my hamburger and it was good. Oh, the yeast wash included in a little package inside so that was a definite plus as I don't keep yeast around in the house.

Excellent results in my bread machine
I made this bread in my machine and was a bit apprehensive when I read some reviews that said they had problems with the rise. I actually had the opposite. My loaf had about 20 minutes of baking left and it had blown the top of the machine out of alignment. The finished product was a very good bread for being low carb. I've tried many brands of low carb ready made bread and found them to be bad to just OK. This Bob's Red Mill had a good whole wheat taste. The texture had a nice "mouth" and it toasted up great. I'm impressed.

Bad yeast waste of money
Would give 0 stars if I could. Had a professional baker bake this for me and both loaves must have had bad yeast as neither rose up even proofed it for 1.5 hrs

Find the real bread machine directions and adjust water as needed.
The bread machine directions were not on this package so I followed the directions for making it by hand, but using my new bread machine. I produced a really ugly loaf with a totally delicious flavor. When I looked up directions on line I discovered several problems with my approach. Eggs should have been at room temp, not right out of fridge. Liquid ingredients should have been 85-90 F not 75-80. And I should have added water by the teaspoon during kneeling until it made a nice elastic ball rather than the shaggy mass I produced. But, let me repeat, what came out was totally scrumptious and had a wonderful texture. Don’t know why the machine directions weren’t on the package since the graphic on amazon clearly showed the correct ingredient temperatures. I suggest getting the 300 recipe bread machine recipe book that amazon sells since it has great insights about what the ingredients do, functionally — including a recommendation to add a tablespoon of wheat gluten over what the recipe calls for...I will try that next batch I make. Most multigrain recipes call for either way too many types of flours to be practical to stock at home; or adding multigrain cereals, but that leaves the question open about how much water to use in the adjusted recipe. So this mix is tasty and handy. The loaf is not homogenous but contains a lot of small seeds so it really looks like a multigrain loaf, which was important in my selection. So don’t be fooled, this may say it is low (net) bread, but in my opinion it is mainly a true multigrain bread mix.

cannot make by hand as indicated
I followed this recipe to the "T. It never came together as a loaf. I ended up with something that was crumbly and just a disaster. I wasted perfectly good money. Sorry I bought this. I'll bet it isn't good in a bread machine either. Disappointed.
