Why does this gelatine need to soak for 30 mins, it seems excessive. I have used leaf gelatine previously which only needs soaking for about 4 minutes

Hi Jen, Thank you for your enquiry. Powdered gelatine has to be treated differently to leaf gelatine. Due to the way leaf gelatine is produced it has effectively been partially "bloomed" already, which is why it only takes a few minutes to be ready for use. We suggest thirty minutes as this is a good average time for blooming powdered gelatine. The length of time it takes to bloom gelatine powder is affected by the liquid you are blooming the gelatine in, so some fruit juices will take longer to bloom than water for example. It is impossible for us to give exact blooming times for every single liquid that our customers may use. Blooming the gelatine for a shorter time could result in you not getting the best out of the strength of the gelatine, so you are paying for a 240 Bloom gelatine, but because you haven't bloomed the gelatine for long enough, you may only be getting the strength of a much lower bloom gelatine. Also make sure that you do not boil the liquid as this will also degrade the strength of the gelatine Kind regards Gavin

Can this be used to make jelly sweets?

Yes. Have used it myself, but beef is better. Just need to mix it with cold water first (blooming), then it gets thicker. Then you heat this with your flavourings / as your recipe follows.
