I just received mine in a different package, just a clear bag with a simple label that says what it is and some nutritional information. Definitely not happy about it.

What is the right fluidity for chocolate bars

I’m not sure but I have made a lot of molded chocolates with this product. As long as it’s tempered it should make a chocolate bar without a problem. Once it get’s too cold you can tell, it doesn’t flow and it begins to clump up. Temper your chocolate and begin pouring into molds. When it gets too cold you have to remelt it and retemper it or use a microwave and gently melt it in 5-10 second bursts just until it’s melted. For Milk chocolate you want it 84-86 degrees to temper. Don’t go above that if using the microwave and you can keep it in temper. if you know all this and were asking a different question, I apologize. I temper my chocolate using the tabling method and find it really simple, I can feel the second it goes into temper by the way the metal spatula drags through the chocolate so I don’t bother with temperatures but I’m just making a few candies at a time.

What is the expiration date for the chocolate?

there is of course a point when you should not eat chocolate but the main thing to keep in mind is that if it has been in its packaging you shouldn't expect anything wrong with it as long as the packet is still air tight if not i highly recommend you get a refund
