Xanthan Gum
Anthony’s Goods are always better than other brands in my opinion. They are fresh and reasonable in their prices. They also have a wide variety of products. Something for everyone who uses their goods. I have been a customer of them for years. I will continue to be a customer of their too. Love all their products so far that I have tried, which is a lot! I use Xanthan Gum in all my baked goods. Great for homemade bread.

Great Thickener
Always good to have XC polymer in your cooking arsenal. It thickens a lot of “watery” liquid foods. A little goes a long way to help soups, sauces, salad dressings, and gravies to make them cling to foods better. It forms a clear viscous suspension that is visually appealing and does not alter taste.

It's xanthan gum!
Not much else to it, xanthan gum helps thicken, emulsify, prevent separation, and imitate the stretch of gluten in gluten free recipes that don't have said stretchiness to the dough. This is great and works as it should. A little goes a long way. There's also advice on the back package for ratios in various things, like how much to use when making a salad dressing, or a baking recipe, etc. My only warning, and this is perfectly normal for all xanthan gum, so it has nothing to do with this product: xanthan gum is slimy. If you blend it in a smoothie, you'll find that your blender might feel slimy, and the measurement spoon you used probably will too, once you rinse it off. This is only really a problem when xanthan gum gets to "clump" in one area, like it could with a blender, or all the fine powder on your measurement spoon. It makes cleaning up a bit more difficult, is all. Although I definitely wouldn't recommend leaving your dish in the sink. Xanthan gum could get very hard to wash off after it settles onto a surface, so just clean up after using your kitchenware and you'll be fine. It's xanthan gum, it's great.

Not for dysphagia or those with oral tactile issues...
Kid has been in need of powerful food thickening since 1998. ThickIt Concentrate (fka ThickIt 2... still blue lid container). With all the haywire shortages going on - toilet paper, anyone 🙄 - I figured it wouldn't hurt to have a 'back up plan' in case our preferred food thickener became unattainable. I also thought it might be smart to compare the two, as I couldn't find where anyone else had... Whereas our preferred ThickIt 2 is modified corn starch (whether they modify by processing technique [something about an electrical 'zap'] or enzymes or chemicals, I don't know) Xanthan Gum is some "sugar building blocks fermented blah blah blah". For us, this doesn't matter. For my purposes, I made 16oz of what I call "Gatorade Jelly" - it makes his beverage the consistency of thick pudding or slightly 'wet' mashed potatoes or sieved jam. Because the TI doesn't keep the liquid bind as a solid in the stomach, it's a good way for us to add fluids. (He NEEDS a GI tube but they won't because he's developmentally delayed and apparently the DD love to yank their GI tubes out daily. I usually put the 2 cups of Gatorade in a quart container with a screw on lid, add the 1/2c TI and shake violently for ≈20 seconds. Thickness is achieved within a minute to 90 seconds max. With the XG, mixing with cold beverage left white chunks. Had to remove to a blender and blend on high 30 seconds to get rid of the white chunks. Thickening was possibly more immediate than with the TI, but thickening didn't seem to stop. I used maybe 2 tbsp of the XG. Because of the costs and volume, the measures can't be compared by my math-challenged brain. The Gatorade with XG got so thick that I had to use a fork to get it to wash down my sink drain using 135°F water. For us, that's gonna make the XG a Plan B only in the direst of circumstances. As far as texture, the XG thickened Gatorade was, in all forms of thickness, slimy. Oral tactile sensitivity isn't an issue for us, but it's a nightmare for many. Hope this helps another caregiver 💛

I use it as a curl cast!
Yeah I use it as a curl cast. (I mix a minuscule amount, less than a 1/4 of a teaspoon, in about a 1/4 cup of filtered room temp water.) Stir like my life depends on it until belened and clear. Understanding that it will look and the consistency of regular water, but if you feel it, it feels smooth slippery. Pour it upside down all over my head at the end of a shower. Brush and work it into my scalp and strands, squeeze excess out. Rinse and wipe it off my face and body because it's only one degree of separation from water but isn't. Proceed with whatever method I need that day. It's amazing. My curls are low porosity and this works as an amazing mouse substitute for someone who has chemical sensitivities. It's difficult to feel the cast, but I can definitely break it. Less isn't more - it's mandatory. It took me three days and 5 showers to washout a half a teaspoon of this stuff definitely work up until you find your perfect amount. LOL.
