What I wanted. Could be stronger and .. read review.
I'm a big fan of miso but don't really know what I like except STRONGER than light and taste closer to bullion vs. grain. This is much better than last batch. It came very wet, but weight / $ was Incredible.It's quite low salt which is a benifit. You can add LOTS per 1000 mg sodium and ADD salt to taste for dish.I use to in most cases I might use chicken broth. Unami ,flavored rice, curry, brothIt's terribly cheap and as I said unami can be appied to anything in smaller qty.I will try to find an expert - this isn't the perfect one for me but can't explain why 4 of 5 Stars. for my taste needs5 of 5 price and quality

Red miso is my favorite
This is my second purchase of this red miso paste and I just love it. There's so much that lasts for quite a long time and I have not been able to find this amount at the Asian grocery for this price.I wish it were in an easy dispense type of container, but I think they would increase the price for that so I'm happy to work with this type of packaging. I just cut a small corner off so I can easily squeeze out just what I need.Blends well and tastes amazing!

Perfect for what I needed it for.
I was perfect. My only complaint would be the amount. I couldn’t find any smaller amounts and I only needed a couple of TBS’s. I tried to scoop and freeze it but the product doesn’t freeze. Interesting and kind of curious why it doesn’t? Overall good flavor and what I expected

Exposed to sunlight and unappealing color, no refunds
The first time I bought this product, it arrived the color of white miso paste and was very good. The second time it arrived looking like black slime. I'm finding conflicting opinions about whether it's still good -- cooking websites say to discard discolored miso, but some of the reviews here say it's fine. Obviously the seller exposed this to heat or light and it oxidized.... Whether it's food safe or not, it's disgusting looking and a little nauseating. I'm also told by Amazon that no refunds are available, so I won't be buying from this vendor again.

Great miso for recipes!
I found a recipe for miso salmon I wanted to try and it tasted great! Because it didn’t use too much of the product, I also tried making miso soup with it and it tasted like what you might get at the restaurants. It was easy to use and a great way to change up the flavors of what you cook. The recipes I found didn’t call for a lot of miso paste so I feel like some of the product may go to waste depending on how long it lasts once open. It would be nice if the seller could carry this in smaller sizes. I just hate seeing stuff go to waste.

This is the real thing, authentic, other reviewers are misinformed
We lived several years in Japan, this is just delicious and authentic. About the reviews claiming this not being white, please understand that White miso isn't really white. It can range from a light golden brown to a darker toffee color. Advice: make sure to have a simple dashi broth bring to a boil, turn off the heat and pour on a cup with about half to one table spoon of the miso paste, add fresh green onion and stir gently: like being in beloved Japan. 3 minutes and it is magic.

It's not white paste
Package says "white paste" but it is "not". Soup is brown but still taste okay.

Great taste
it's really hard for me to find Miso off the shelf that doesn't have MSG locally so this is perfect. I like that it has a great taste and not too salty compared to the more famous brands that I always see at the local market. Those have some weird sour taste to it. Those big brands never taste like the restaurant even when made with dashi. This Miso has really smooth taste and it even separates and settles into a cloud like authentic Miso in the restaurants. I don't like it too salty so I added less but still has great taste. I'll definitely get this again.
