Q: Can I use this between my vinyl siding and my hose bib?

I used it between HardiPlank siding and bib, can't see why vinyl might be different. HardiPlank might be even more difficult since it does not seem to hold screws well, crumbles easily. The plate does have some thickness to it, so need at least a little "play" in your line to slide between siding and bib, i.e., it pulls the bib out maybe a quarter inch. My bib was backed with pvc piping so had that play. Metal piping may not have that much give.

Q: Is galvanic corrossion not a long term concern?

The first one of the three I now have has been installed for two years with no sign of corrosion. That was my concern also, but as I said after two years there is no sign of corrosion. I installed to additional ones this spring. They give my faucets GREAT stability! The two I installed this spring I drilled two additional holes each about an inch inside the existing holes and I used #8 stainless steek 1 1/2” screws. On all three I drilled and tapped the holes to fasten the faucet, and used 8x20 stainless screws.

Q: The screws for the house are to big in circumference. What would be the next size down?

I would take the screws to the hardware store and get the next size down to be sure you are getting what you want. Drill the proper size pilot hole for the new screw size. The screws that came with the package worked on my hose bib.

Q: Can you give the dimensions of the plate? I would love to see a rectangle plate as an option to move the mounting points off the centerline!

A smaller rectangle option is "style two" in the patent....possibly out later this year. The dims are on a picture, but you have to click the images to get the rest of them on Amazon. In case you have trouble: 7-1/2" wide x 2-3/4" tall.
