Probably not, the soft leather will stretch. Better on firmer, veg-tan leather.

Max wide is approximately 1 inch.

Could i use this to thin down 5 ounce leather to lets say 3 ounce leather?

For strips as the other commenter stated if you're careful but it wouldnt be even. There's a machine thats specifically designed to thin leathers uniformally.
