Sharpest knife I have ever owned.
This is a fantastic knife. Really, really sharp. I have Global knives at home and to be honest this is considerably sharper and they haven't been out of the drawer since this one arrived. It cuts through fruit, veg, bread and meats so cleanly and with such little effort required. Soft, over ripe fruits like grapes or tomatoes are no problem because the knife needs such little pressure to cut, it doesn't squash them first like steel knives do. I liked this knife so much I immediatly went back on line and ordered the 7.5cm paring knife. Compared to steel knives these are very light weight and do feel a little fragile, though I have no evidence that they are. However, considering the cost of the knives a protective cover should come as standard because until I get some I am keeping this knife away from anything it could be knocked against in the cutlery drawer and even then I think it will always have a special place. Just because I love it so much if nothing else!! If you enjoy slicing and dicing this knife will take you the the next level of pleasure! ;-) Finally, Amazon should be able to remove erroneous reviews like the negative one for this knife because to give a product of this quality one star due to postal issues is just plain ignorance. Dismiss that review and concentrate on the sensible ones.

Lethal. In a good way.
Lethal. I accidentally sliced my finger *to the bone* - I could actually see bone - simply by lightly catching the knife on my skin whilst washing it. These things are so sharp it takes almost nothing to cut yourself so you have to be very careful. That's how sharp they are. They also retain the edge for an eternity. £15 to send your knifes when they eventually do go blunt to Kyocera's authorised UK sharpening service when they do eventually go dull - mine are nowhere near that point yet and I've had them for about 14 months now and they have no problem cutting me wide open so it's easy to argue that is well worth the money. Caveats apply with ceramic knives, you have to be careful what you use them for because you can chip and break them because they are ultimately brittle but they're a lot tougher than I expected. Worth buying the quality tools in my opinion.

Super sharp shredders
These are super sharp, lightweight and well balanced, they will slice through most things with ease - fruits, vegetables and fingers. I mean most things but there are things these knives are not recommended for use with, read the instructions in the box to know what not to chop. I've seen reviews where other buyers have complained that these knives are brittle. They probably are thinner than most knives on the market, let's just say they are not thick stainless steel. These blades are not made to be thrown into the sink or dishwasher, or once dry thrown in a cutlery drawer amongst other utensils. They will end up chipped or broken. Then you'll end up leaving a review saying they are brittle and useless. If you want to look after your knives then buy a set of hard knife protectors to slip them in. The knives stay sharp longer than stainless steel and don't cause foods, such as apples, to go brown when chopped. Don't ask me why though. I seen it on the internet and then tried it for myself, et voilà, a chopped apple that didn't go brown. On a serious note - these are top quality blades and if looked after properly they will last for many years.

Happy, just paranoid about damaging it
I'm permanently terrified of inadvertently dropping this or snapping the blade in some way, so I've treated it very gently, but after a month or so, it's still impressively sharp (more so than it feels, because there aren't the uneven sharpening edges you get on a metal blade) - more so than I ever got a steel knife to stay except if I resorted to a whetstone. The biggest issue I have is that food sticks to it much more than the colour-coated steel knife I used before, so I tend to throw the things I'm chopping around with an upswing and there's more resistance as I go through moist items; I can't vouch for how it compares to a naked steel blade. I've not tried sharpening it yet (I have the Kyocera sharpener), but nor have I needed to - though I don't expect it to last forever. I'd have dulled a steel blade by now! Oh, and I've had to resort to the blade guard for crushing garlic. It's weird how light this is compared with a metal blade, but it's worked very well so far.

Blade broke after 1 month-
We had these knives for about 6 weeks and loved them. Very sharp and wonderful to use. Very disappointingly the small blade has now broken. We were only cutting cheese and did not put the blade under any duress. For the price and the length of time we have had the blade I am very disappointed with the purchase - I would’ve expected a knife of this price to have lasted a lot longer. Additionally, my husband is worried he might’ve ingested the part as we haven’t found it anywhere and worry it might have stuck to the cheese he was cutting. I am struggling to contact the seller. Don’t waste your money!

Tagliente ma fragile, da usare secondo le istruzioni.

Too fragile. Can't even cut fresh bread. Relatively sharp but nothing exceptional. Can't talk about longevity because it broke during the first month of use.

Hasta el momento actual he adquirido cuatro cuchillos cerámicos de Kyocera, en diferentes formatos, y el resultado de todos ellos ha sido excelente.
