Is the handle plastic, wood, or metal?

Mine is cast and made into part of the plane. This a newer model and the chances of getting the wood handle like they used to make, you would have to go to Ebay probably.

Can this be used with different sized blades?

Probably not recommended. I think the way you can adjust the depth of your rabbit cut is by adjusting the fence.
