Can this chair be made to fit counter height?

We added length to the legs with nice furniture-grade stained-to-match wood. Stuck some felt feet to the extensions, and right up to the bar-height counter. I've had this since 2017, and we are on our third grandchild using it...it's the best thing EVER. I love how we can adjust it to the needs of each child. We've used it as a traditional high chair (with the tray, which is nice and big, and the plastic cover makes clean up a breeze), a counter-height high chair, and a chair at the dining room table. I'd buy this again.

Can the green cushion piece be removed and/or replaced?

It can be removed. I am pretty sure that it can be replaced as well. The company has been pretty good in replacing items. The chair arrived with a plastic piece broken and the company immediately agreed to sent a replacement piece. We haven't had any problems since. We remove the cushion on a regular basis to clean it.

Can the tray be removed with one hand?

The tray cover (Transparent) is dishwasher-friendly One-hand removable while the wooden tray was designed to be operated by two hands (Double Lock Child-Safety).

The picture does not explain if there is a setting for age 3-8. Is there a way to set it up for kids between age 3-8?

Yes, for Kids between age 3-8. the seat height can be adjusted one or two levels lower (level 1 or Level 2) than the default setting (Level 0) for infant.Since Y chair comes with patented EZ-SEAT feature, height adjustment is an extremely easy task (few seconds) when compare to other traditional wooden highchair(15 minutes or more).No tool is needed.
