My favorite brand of Kimchi; very bold, spicy, and pickle-y flavors
tl;dr: Wildbrine is my favorite kimchi to keep on hand. It has bolder, spicier, brighter, more pickle-y flavors than most store bough kimchi. You can also store it in your fridge without the aroma escaping permeating everything.FlavorWildbrine is a bit of a fusion recipe. The flavors are a bit like a blend of 1/3 sauerkraut (minus the caraway seeds) and 2/3rds extra spicy kimchi (minus the fish flavoring). It's not only spicer and more pickle-y (as above) but also has a nice subtle sourness from the garlic and fermentation. It does not have fish sauce flavoring, no fermented shrimp. This is a minus for authenticity, but a plus for long term storage.Kimchi at a good Korean restaurant can be sublime when they get everything right. However, at the average KBBQ the kimchi can be very hit or miss. Without enough time to ferment and soak in the flavors, kimchi can be fairly bland. It can also be too fishy or too salty.Tastes vary, and there's a wide range of kimchi. So be sure to try different styles and brands until you find one you love. Wildbrine is the one I love.UsesWildbrine kimchi is perfect for simple rice dishes at home, or to satisfy random kimchi cravings. You can safely store it in your fridge for months without it outgassing and making everything smell of kimchi.* That's a big plus.However, when we have Korean BBQ at home, we'll buy a giant jar of kimchi at the Korean supermarket. Those giant jars cost about the same as the small jar of Wildbrine kimchi, and you can feast on them for weeks. But if you don't have access to a Korean supermarket, this may be your best bet.TextureWildbrine kimchi is well chopped, making it perfect for small servings and quick bites. Depending on the batch, it can sometimes be a bit mushy. Similarly, the flavors aren't always bright and punchy as I'd like. My guess is that it depends on how long it's been on the shelf or in the fridge.——————————* We used to have a dedicated kimchi fridge. We used to make kimchi at home, or at least add chili paste to store bought jars to spice them up. Once you open a jar of kimchi, the aroma will permeating everything in the fridge. Hence the separate fridge.Fortunately, you don't have to worry about that with the Wildbrine. It seals up nicely and doesn't have the same pungent, fishy aroma (which I love, but not for long term storage).

delicious and nutritious
this is my absolute favorite kimchi that I've had in a long time I haven't tried all the different flavors but this particular flavor has a strong lime salt taste along this not being overly spicy. I use it to create vegetable salads it mixes wonderfully with cucumbers, strawberries and a little EVOO (extra-virgin olive oil) and a little dash of citrus or your favorite vinegar it tastes great to eat it fresh right away or you could just leave it in the fridge and munch on your salad for several days

Not Authentic
If you’re looking for the authentic flavor of Korean kimchi THIS AIN’T IT!The only thing that resembles authentic kimchi is the hella hot heat! Other than that it is extremely lacking.I make winter kimchi with my mother in law [Who is Korean] every year. I know what goes in it and what the flavor is supposed to be. For some reason they added sea vegetables flavor🤔What in the world is that? Not good. “Mother in Law’s Kimchi” is also vegan but taste better in my opinion. It doesn’t have as much heat though if that’s your thing.If you want the authentic flavor of real Korean kimchi you won’t get it by eating this. It’s not that the flavor is bad it’s just not real kimchi.As for the flavor of this brand it’s lacking. I would say they don’t believe in garlic over there. This does not have a good flavor of anything. The brine is strong. It’s like if you’re eating vegetables with a vinaigrette that is extremely hot.Hopefully this helps. If you buy it and want tomute the heat eat it like Koreans by mixing it with rice.

This is very good kimchi! I love that it has no sugar. It's probably one of my favorite brands. Excellent taste.
