Perfect pan! -- FYI, the 'old' 18x13 pan
I wanted to publish this review because, first, the pan is the BEST. I mean, it's really good quality. It doesn't buckle, it bakes evenly, and it doesn't burn your food, especially when used with a Silpat mat or simple parchment paper. It's thick and sturdy, a full half-sheet size, and one of my very best kitchen 'friends'. It has high sides and is easy to grip and heavy enough to support a full pan of biscuits without wobbling or twisting. If you've ever had to cook Christmas breakfast for 16 hungry people and had to stuff a cookie sheet as full of biscuits as possible to feed everyone, you'd know how important this is. ;-) The 2nd reason I'm reviewing is because of the listed 'size' of the pan. I've ordered quite a few of these over the years, both for myself and as gifts. When I came back this year to order, I found my old 18x13 pan was no longer available. It was replaced by a 16 3/4 x 12. What?? Is it actually a smaller pan? I looked high and low and also even tried asking sellers if it was the same as the old 18x13. I noticed that the Silpats that were ordered alongside this pan were the same size as I've always ordered and after reading the one negative review about the size being wrong, I took a chance and ordered it. It's the same pan I've always ordered. Why the size change? I assume it's because the measurements are now the 'inside' measurements as opposed to the 'actual' measurements of the pan which, based on the current negative review, is a little misleading. So, it's a great pan. It's a half-sheet size, but it IS larger than the listed size, overall. Just take that into consideration if you would consider using this pan in anything less than a regular size oven.

Fits side by side in our oven
These are heavy duty pans, and they do fit in our oven side by side, which was my main concern because the given measurements are interior, not the overall exterior size. They are also uncoated, which is stated in product description, but some reviews seemed vague about that. I think I will like them very much, they are heavier and deeper than the sheet pans we had been using and it looks like they will last a long time.

Great, but with reservations
I bought this pan after the glowing reviews it got from Cook's Illustrated/America's Test Kitchen. It is definitely heavy duty, everything I've baked on it has come out beautifully browned (not burned as some darker or thinner pans are want to do). It has somewhat of a non-stick coating on it, which is great at first, but as soon as something, like cheese, gets baked onto it, and you have to scrub it with a scratchless sponge, it starts to wear off. I ALWAYS wash mine by hand, with non-abrasive cleaning implements, but it is still losing its non-stickyness. I also noticed after this last wash that the surface is getting pitted in a couple spots, no biggie, but it ruins the loveliness of the pan. Overall, this has been my favorite cookie sheet/jelly roll pan so far. Oh, and this is smaller than a half-sheet pan, just FYI. If I was going to buy another one, I'd go a couple inches bigger all around, this one is pretty small.

AMAZING PANS AND...I'm NOT a Baker!!!!
Sorry folks, I do not bake. BUT... I do cook and these pans work fabulously! Almost anything I cook in the oven I now put on these pans. I have cooked chicken, chops, fish, vegetables etc and everything comes out great. I used to use All Clad's roaster for general oven cooking but I found the roaster pans were very heavy, involved a bigger clean-up and the high sides prevented the heat from circulating into the meat, fish and vegetables. These pans are so much better! I even burnt barbeque sauce onto the pan from roasting chicken breasts. I threw the pan into the dishwasher and voila... all clean!!!! I also have used them at high temperatures... 450-500 and I haven't experienced warping. If I were to bake, I might consider getting a pan dedicated just for baking but for now, I'm pleased with the over all general cooking use and easy clean up with these Chicago commercial pans. They are very sturdy and earn the "commercial" title. I love them and think they are an absolute necessity for any kitchen! Prior to this purchase and lucky find... I did have 'cheap' baking pans and that is exactly what they were. They were light, warped at high temperatures, turned an ugly brown color and never got really clean. They always looked dingy and I'd be embarrassed to use them if i had company. Now, I feel like I'm on the food channel cooking with quality pans. You get what you pay and at this price, I think they're a steal!
