The cattle are 100% grass fed, not certified organic. In terms of the health benefits, what you want to look for most is that the beef products you use are fed their natural diet and pasture raised, without contaminants, sprays, antibiotics, hormones, and other harsh chemicals. Grass fed means the animals are allowed to roam freely and eat a natural diet, never being fed grains. Organic label doesn't so much describe how the cattle were raised as much as defining how they cannot be raised. (Cannot be overcrowded, kept in lots for extended periods of time, or exposed to contaminants and chemicals.) These are essentially the exact conditions, by default, of our grass fed, pastured beef. "Organic" beef can, however, and often do, get fed organic grain.

Yes, you can use it to thicken hot beverages. But, you want to soak it in cool water first, or it may get clumpy. Add it slowly, too much will make it coffee jello!
