Any suggestions on where/how to best place the probe in a standard gas oven? Thanks.

Close to the center as most gas ovens fire the flame at a burn plate and the heat comes around the sides and that would indicate a higher temp and since you are most likely placing baking items in the center, that would give you the temp where the item is. Now if you have a convection (oven with a fan) oven then the probe can go anywhere as the air movement will distribute the heat within the oven.

How do you secure the probe in the oven?

Before I bought this thermometer to monitor my oven temps... I went on several (non ad) review sites and one of the reviewers suggested using a small (1/2 inch... any larger and the probe slips around in the binder clip) all metal binder clip to secure the probe to the wire rack... locating it toward the center of the oven..... this works very well and holds securely

Can the display box be opened so the back of it can be screwed onto the over door?

No. From the looks of it, I don't think you'd find a good way to screw it on to the oven door. But it does have an indention on the back that is similar to a picture hanging situation where you could attach it that way. Better alternative might be to attach it with double faced tape close to the over door at a place that doesn't get too hot. We've just had good luck with it just sitting on the counter top next to the oven Works well for us that way.

Has anyone tried this with a Coleman camp oven?

I have not tried it with a Coleman Camp oven, however I did browse for that item recently :) This Thermometer is accurate in any oven, it will be more accurate than the dial indicator on the oven.
