Q: What is the effective length of the blade? not the overall length.

the part of the blade that protrudes from the handle is 7" long. The serrated cutting edge is 6.25 inches long. I returned mine as soon as I got it because the usable blade was almost 3 inches shorter than I was expecting.

Q: has anyone ever used this to cut 5 inch foam?

I tried to use it to cut down my motorcycle seat without any success. It couldn't get through the foam. I gave up and used my nice Forschner 10" bread knife (under $40) and it was great. That and a rasp was all I needed

Q: Does this have one or two blades?

This e-knife have a blade set include L-blade and R-blade , you must assembly them before you plug into " handle module".
