Fantastic Pan makes awesome New England style hot dog buns.
I just received this pan last night and I could not wait to make my freshly milled white wheat hot dog buns. They just came out of the oven. They turned out amazing. The pan is very heavy cleans easily and of course makes the perfect New England style buns. I could not be happier with this pan.

Worth every penny; fastest hot dog buns ever, no rolling of individual buns, each one the same size.
It is expensive, the rolls must be torn apart, it is difficult to balance a weight on top of an inverted cookie sheet to stop the rolls from rising above the top edge of the pan (if the weight is not centered perfectly, the rolls will rise more on one side of the pan than the other and not be the same height), and the recipe provided does not work (too heavy, too much dough, buns rise above the pan, one roll is much too filling). So why did I give it 5 stars? And why do I recommend it to everyone who eats our hot dog rolls? Because: I changed the recipe to make lighter rolls, I used 2/3 the quantities in my recipe so that the rolls did not rise outside the pan, I put a cast iron griddle on top to stop the rolls from rising and to make the bottoms even (the bottom forms the rounded tops of the buns; the top forms the flat bottoms). Because: the pan is sturdily made, it distributes heat evenly, it is a professional quality pan, is nonstick, will last forever, and forms hot dog rolls with perfect rounded tops. Because: I can make organic tasty hot dog rolls served with healthful nitrate-free weiners, everyone loves them, our young grandsons ask for them instead of purchased hot dog rolls every time they come, we have a hard time finding whole grain hot dog buns where we live; organic buns are not available here; I can make fresh buns even for unexpected company with a bread machine to make the dough, I just roll out the dough to the size of the pan, drop the dough in, and let it rise. No rolling out 10 buns and trying to shape each one individually.\, all rolls are the same size and shape. And I recommend it to everyone because: if I don't, people will borrow the pan and I will never get it back, if more people have this pan, I won't need to make all the rolls for each family bbq, and what could be easier than using this pan???

Great pan for making GF hotdog buns
I bought this because we couldn’t find gluten free hotdog buns that were even decent. I swear we tried them all and they were crumbly, dry and broke apart horribly as you tried to eat them. Enough about bad buns. This pan is very heavy duty, I thought about this purchase as it is quite expensive and I hadn’t really found a good bread recipe to even try in it. The first three bread recipes I tried were major fails. But the third was decent and the fourth was perfect. This pan cleans easy (has a coating) and is very solid. I just hand wash easily after using it, really only to get the oil off the pan, nothing sticks. So if you want to make some fabulous GF buns that don’t even remotely taste gf buy this cookbook, No-Fail Gluten Free Bread Baking. The hotdog bun recipe in there is great but doesn’t make enough dough so the buns are a bit puny in this pan. I made the white sandwich bread dough and it filled the pan perfectly and they baked very well. The only other change I made was to proof longer and bake at a lower temp (325F vs 375F). I use a steam convection oven (thermador) and any convection oven will need the temp reduced a pinch. Love the pan, USA pans are very nice! I have a mini cake pan (6 wells) as well and will try making hamburger buns in it.

Perfect for Cane’s toast dupes
Best pan if you want to make fantastic garlic toast!! I used this to make a bbq loaf which I couldn’t find anywhere and when I tell you, I absolutely love the flexibility!! Ten little Texas toasts, or ten split top hot dog buns- whatever you want! Bakes perfectly, no fuss

Don't put a cover over it when cooking
First, the quality of this pan is top notch. It's not a lightweight pan like you would find everywhere. It heats evenly. My only complaint is similar to others here. When you put a cover over it as directed, the rolls come out far to thin to hold a hot dog. They are barely wider than the hot dogs in them. For this reason, they break and you have to try holding two bun sections and a hot dog between them. Forget about adding anything to your dogs. However, for my second batch, I didn't cover it. This allowed the buns to grow about 50% taller. Now the hot dogs fit with no problem. And, the rolls brown from bottom to top in fifteen minutes at 375. Another change from my first batch is that I cut the dough in ten strips instead of laying the sheet into the pan. I know people say this is wrong, but it doesn't take much effort and they pull apart instead of having to be sliced. A tip for doing this is to shape your dough into the size of the pan (using the pan as a guide). Then, set the pan in front of the rectangle of dough and cut the strips based on the lines in the pan. Some might think there's no need for the pan if you are slicing it into bun lengths. At that point why not put them on a sheet pan and bake? Yes, that would work, but the pan makes it easier to get the shape right and you get the bread sides which are great when grilled with butter. Regular hot dog rolls can be grilled on the inside, but this pan allows you to make rolls that can be grilled on the outside. The pan keeps everything in place and allows the rise to go up, not out.

Heavy duty non stick pan.
The pan is very heavy duty. I baked the bread without greasing it and it did not stick at all. I let the bun cool in the pan and I noticed it started to "sweat" a bit so I took it out. It also washes easily, no need for a dish washer. Hopefully it will last long.

As described and arrived when expected. Have been using this pan for several months now and it still looks like new. USA Pans in my opinion are top notch and are built for the long run. They aren’t cheap but you get what you pay for. Have several other USA Pans and they are all fantastic.
