My use case is non-PEX. My Hose is 19mm (3/4") od, but my wall thickness is slightly thicker. 3mm vs the PEX at 2.25mm. I should still be okay, right?

Yep! Just take your time and double check yourself to make sure it's nice and square on the hose before and during the first few clicks of the crimper, the cinch it tight and you'll be good to go. I've used the 5/8" clamps on 1/2" marine grade hose many times without an issue ever popping up. It's thick wall hose as well.

What are the included sizes? The information doesn't seem consistent.

I got what is exactly pictured and listed on the inside top cover in the picture. The larger sizes are a quantity of 2 at least. These have worked well will replacing hose clamps. I'm satisfied. Quality is standard that I have found. I have not had any problems to date with the clamps or plier.
