Really great cheese
The cheese was used in girolle to create rosettes which came out perfectly. The curling enhanced the texture and flavor of the Basque cheese. I would highly recommend it.

Excellent sheeps’ cheese especially when prepared with leeks and wine as instructed
The key is to follow the recipe to make the cheese caramelized with leeks and tiny nuggets of chorizo, and wine. Mouth wateringly scrumptious!! The Basque are renowned for the deliciousness of their culinary skill.
