Indian Instant Pot(R) Cookbook: Traditional Indian Dishes Made Easy and Fast Review: This book is the reason I bought an Instant Pot - For as much as I love cooking, I was one of the last people my age I know to hop on the Instant Pot bandwagon. This cookbook is what got me there. One day I thought, I wonder if the IP makes cooking Indian food a lot easier, and I wonder if there's a dedicated cookbook for that. This book came up immediately. And so, come Prime day when the IP was an amazing price, I took the plunge. However, I still didn't get this book right away. Noticing on a review that the author has a website featuring many of the recipes in this book, I decided to try out a couple of those before spending the money on the book. After the butter chicken, homemade paneer, which was then incorporated into a matar paneer, and a dal soup (all within a week mind you) I finally realized this book would be well worth it. Upon its arrival, and my perusal thereof, my excitement was through the roof. Pitre, for the ease of us home cooks, deliberately limited the necessary spices and specialty ingredients needed to make these recipes. Her writing style is fun, even dropping a Lord of the Rings reference at one point, and smart, and she expertly demonstrates a thorough understanding of food science and the principles at play during the pressure cooking, all of which give me confidence in these recipes. This isn't just some amateur blogger's slapped-together attempt to be current. The contents are well rounded, from the homemade spice blends, sides, mains of the meatless, seafood, and meat varieties, drinks, and desserts. The spread of lassi recipes (relevant because one can make the yogurt for it in the IP) in itself is impressive and mouth-watering. I have a feeling this is going to be one of my most used cookbooks in my collection! Review: Easy to make, easy to eat - I love Indian food and as it gets colder in Chicago I crave it more often, but during the week (and because I'm a full time returning student) I don't have the time or money to indulge. Indian instant pot cookbook removes both roadblocks to curry bliss. The recipes are straight forward enough with ingredients you can find at any grocery store, and after some prep the cooking process is a breeze. I was already in love with my instapot, but now more so. I've looked around for instapot Indian recipes online, but the recipes in this book have been the most concise and easiest to make I've seen. For those who are concerned about the complaints on authenticity, put your fears aside. Food evolves with time and the mixing of cultures. Do you think the pizza delivery you get is authentic Italian? Or the Chinese food you get at your favorite restaurant is authentic Chinese? Nope! I'm sure that this book does make occasional accommodations to make it instapot-able, but it tastes like delicious restaurant quality Indian food - and that's all I can ask for unless I'm willing to shell out $1200 for a ticket to Mumbai. At a great price point, affordable ingredients, and the fact that you can meal prep nearly a weeks dinners with one go - it's a steal.

Everything I've made has be delicious
I bought a copy for myself as well as my friend after another friend recommended it to me. It's been a great resource for making delicious Indian food especially since it's so much easier in the Instant Pot. Sometimes there's a little too much liquid, but if you don't add enough, it gives you the burning warning. Regardless, pretty easy recipes, lots of good information, especially if you like to use recipes as a base to them do your own experimentation (me) and make adjustments. It really takes a lot of guess work out making Indian food. Is it as good as Indian food my Indian friends can make in a traditional pressure cooker? No. But that may be because they're just much better at making Indian food than I am! With how expensive it is to eat out these days, it's been a great way to still get delicious Indian food for a much better price!

Helpful book with lots of beautiful pictures and great recipes
I mistakenly thought I was purchasing a vegan Indian IP book and considered returning it. But the book features lots of vegetarian dishes which I'm easily able to veganize so have decided to keep it. The recipes are good and not difficult.

We use this regularly
Love this book. It has a fry daal recipe that I have used several times so far and so many other great recipes! Very easy to follow and understand.

Having bought the book on a Kindle daily deal, I found the approach of a sub-set of the key spices and dals, very clear instructions and a manageable number of recipes appealing. So, I ordered an Instant Pot on another daily deal (I am sure other makes would also work perfectly well) and tried one of the recipes. I do not eat Indian food at all frequently, but I didn't find the dish anywhere near the best I have eaten. A friend with a lot of experience of making Indian food suggested the spicing level in the recipes is perhaps a bit low, and so worth experimenting. Anyway, I will continue to work through the recipes, given that they are quick and easy, and I know what ingredients are in them. So, for me, it has been a painless entry to making some Indian dishes, and I am thankful to the author for her efforts and approach.

I've only tried one recipe so far (the Butter Chicken on pg. 98) and it was a hit with the group of 3 that I made it for (2 are fussy eaters). Very tasty, very easy and no special, far flung ingredients required. Although it takes only 10 minutes of pressure cooking, the total time was about an hour and a quarter (I allowed a lot of time for sauce to cool down and then a lot of time on the Saute setting to reheat after blitzing the sauce). This was very easy to make too and so nice that cleanup is a breeze. Looking forward to trying more recipes but the book was well worth buying for this butter chicken recipe alone. Update May/2018: Since writing my initial review, I've also tried the recipes for Pork Saag and Kheema Nariyal Saag, both were very delicious. Tonight it's Chicken Vindaloo and I'm expecting this to be a winner too. Recipes are very easy to work with, can't recommend this cookbook enough :) Downside: My husband isn't a fan of Indian food so I can't go through the cookbook as quickly as I'd like ;)

I've been making Indian food for 30 years but I didn't learn to cook in an instant pot - this book has helped me reformulate old recipes in new instant pot compatible techniques and also given me some lovely new recipes to try. So far following the recipes and techniques in this book I've had beautiful results every time. Well worth the purchase.
