Q: Is this pasteurized? Is it filtered?

This vinegar is definitely not filtered. It has a considerable amount of sediment in the bottom, just like the red wine it's made from - don't shake the bottle before you pour it. I don't believe it's pasteurized, either. The company emphasizes that they use very traditional (meaning medieval) methods to produce all their mustard and vinegar. Pasteurization isn't an issue for food-grade vinegar anyway, because vinegar is a pretty potent disinfectant all by itself - and an all-natural, organic one, too.

Q: Does this vintage have sulfites?

According to its British/EU labeling, this vinegar "Contains sulphites." This indicates that the product has over 10 mg of sulfites per liter, or about one one-millionth of one percent. Note that all wine contains sulfites naturally; the red wine this vinegar is made from starts out with a lower concentration of sulfites than most other wines.

7%. Great flavor and makes perfect vinaigrettes. As potent as Sherry vinegar but richer flavor.
