Can users see each others weight? I want my weight to be private but the scales are to be used by a number of users

Not if you each use the app separately, i did not want my husbands weight wtc on mine.

I can only count 12 not 14, is metabolic age a feature?

do you have to turn the scale upside down to press a button underneath to change between kg readings and lbs or stones?

No you adjust it within the app itself. Click on "me" then settings then unit to switch between KG and ST etc.

Will this work with a Samsung A51 ?

If you have a phone which is able to download the app and has Bluetooth then there should be no reason why it shouldn’t work. I have an iPhone which it works well with.
