How do you regulate and control the air going to the fire place, just open the ash tray slightly? What does the flap control, top middle, do?

If the flap is turned to three oclock the exhaust goes under the 2nd hotplate nearer the chimney. It is not hot enough or cooking other wise. I try the ash tray out method. Point is onceit is burning it burns well dont over load it. Better as a hob stove than an oven.
