Yeah, the fermentation will most likely be all done or just about at the 24 hour point. There is no need to rush getting it out of your primary fermentation. Our 48 hour turbo yeast will do 20% in about 5 days.

can you use this yeast with fruit

You can use this with any fermentable sugars. If you're using whole fruit you will need to smash and use pectic enzyme to help breakdown the pectin and release the juice and fermentable. Keep in mind this yeast is a distillers yeast and any fermented product is meant to be purified in said manner to remove the impurities. You may also have to take out additional heads beyond 50 ml depending on the fruit/fermentables used.
