This is fool proof. You can buy a pack of ground pork and make 1 pound at a time if you like. Great flavor without all the extra salt.

We use this to make our own lean sausage from Boston butts. Repeat customer, great value, easy to use, blends well. Mild flavor, no heat. Not too salty.

I buy pork butts and shoulders when they are on sale. My wife then breaks them down and grind them for breakfast and sweet Italian sausage. A tablespoon per pound is perfect for our tastes. We usually get 8-9 pounds of breakfast sausage for a dollar a pound verses the usual $5-6 a pound for grocery sausage. Plus, there is nothing in the sausage except pork and seasonings. There are no ingredients you can't pronounce. Another plus is that after frying there is literally no grease to drain. Plus, taste of the sausage is excellent. I highly recommend.

Makes great chicken sausage. I use 11g of seasoning per 1pound of ground chicken. Add Tbsp of maple syrup and a sprinkle of hot crush pepper. So much better than any sausage you can buy at the supermarket.
