Excellent, flavorful miso for those who like barley, plastic packaging is disappointing...
Eden is among my favorite food brands, and this is their second miso product I have tried (the other being the "Hacho Miso," which I also like almost as much). This one is my favorite so far, as I really love barely, and it has a sharp saltiness to the flavor, a texture that is neither too thin nor too thick (the "Hacho Miso," by comparison, is very thick and hard, needing to be diluted and sifted with water before using), and easy to spread if using as a condiment. The packaging, however, arrived very dented and damaged, and I really wish it was not a flimsy plastic tub since I am concerned that the plastic may add toxins to the miso. I could not find any organic miso in glass though, so this appeared to be the best option that is at least organic and with no unwanted ingredients. After opening, I transfer my miso into air-tight glass jars and store them in the refrigerator. As a comparison to the "Hacho Miso" by Eden (shown in the left photo of the more solid, dark paste), this "Mugi Miso" in the right picture is much softer, spreadable, and lightly clumpy with no need to dilute first is using as a paste or condiment. It has a more savory, salty and grain-like taste from the barley compared to the "Hacho Miso" which is more like a soy sauce taste, to me. I highly recommend this product for anyone who likes more salty miso with barley.

Really great stuff. So delicious. My main concern is to try not to eat too much because miso has so much salt in it, like a really high amount. 37% of the daily amount in like a teaspoon. But wow is it wonderful. I realize that soup temperature like the restaurants serve it kills a lot of the probiotics, and apparently the probiotic thing is real, so I've started just having it at room temperature - I mean with water - but it's hard not to have a lot because it is - I'm getting boring now - SOOO delicious. I guess they call the flavor umami. Salty, savory, great depth to the flavor, just wonderful.

Yummy& completely natural
Great umami taste for noodles or stir-fries and I like that there's no bad preservatives like man made,(manufactured, )citric acid!

Eden Miso
I have used orga ic miso for years. It is very good quality. I use it in baked beans. Miso soup. Thai soup instead of fish sauce. I will be buying more when I need it. It is easy to use. I mix it in the warm water broth from cooking the vegetables then mix it in to what ever I am making so is well distributed.

It's Alive!
This is the only miso that I've found that contains living cultures. All of the other misos that I've found are pasteurized for extended shelf life. I want it to be alive so it can support my gut microbiome.The flavor is surprisingly mild. I've been eating Wegman's brand organic red miso, thinking it was alive, and I only use 1/2 as much because the flavor is so pungent and salty.I've been a fan of Eden products since the 1970s. I trust their product descriptions and quality.
